The Opportunity

A well-established hospitality venue in Victoria is seeking an experienced Head Chef with a passion for authentic Mexican cuisine. This is an exciting opportunity to lead a dynamic kitchen team, create exceptional dining experiences, and contribute to menu innovation in a fast-paced, high-volume environment.

The successful candidate will play a key leadership role in maintaining food quality, driving kitchen operations, and mentoring the back-of-house team. Employer sponsorship is available for the right candidate following a successful 4–6 month probation period.

Key Responsibilities

  • Lead and supervise the kitchen team during daily operations
  • Plan, organise and coordinate kitchen workflows
  • Prepare, cook and present high-quality Mexican dishes
  • Assist in all aspects of food preparation and service
  • Develop creative menu ideas and seasonal menu updates
  • Maintain high food quality and presentation standards
  • Ensure efficient operation during busy service periods
  • Monitor stock levels and assist with ordering and inventory control
  • Maintain food safety, hygiene and workplace compliance standards
  • Train, mentor and motivate kitchen staff
  • Promote strong communication between kitchen and front-of-house teams
  • Maintain a clean, organised and efficient kitchen environment
  • Deliver exceptional dining experiences through consistent food quality

Requirements & Eligibility

  • Minimum 2–3 years' experience as a Head Chef
  • Minimum 12 months' experience preparing Mexican cuisine
  • Strong leadership and team management skills
  • Excellent organisational and time management abilities
  • High-level knife skills and food preparation techniques
  • Ability to perform in a fast-paced, high-volume kitchen
  • Strong attention to detail and commitment to food quality
  • Sound knowledge of food safety and hygiene regulations
  • Professional communication and interpersonal skills
  • Flexible to work rotating rosters, including weekends and public holidays
  • Passionate about Mexican cuisine and culinary innovation
