The Opportunity

An established and high-end Japanese restaurant in the Australian Capital Territory (ACT) is seeking a passionate and experienced Sous Chef to join its professional kitchen team.

This is an excellent opportunity for a skilled chef to work in a refined dining environment focused on authentic Japanese techniques, premium Australian produce, precision and consistently high-quality cuisine.

The successful candidate will support the senior kitchen leadership team, help oversee daily kitchen operations and contribute to menu development, staff development and service excellence.

Key Responsibilities

  • Support the senior kitchen leadership team with daily kitchen operations
  • Lead, supervise and motivate kitchen staff during preparation and service
  • Prepare and cook high-quality dishes consistently
  • Maintain recipes, portion control, presentation and quality standards
  • Assist with menu development, specials and recipe testing
  • Coordinate kitchen sections to ensure efficient and timely service
  • Train, guide and support junior kitchen staff
  • Assist with staff performance and development
  • Manage stock rotation, ordering, storage and waste control
  • Assist with monitoring food and labour costs
  • Maintain high standards of food safety, hygiene and workplace safety
  • Keep the kitchen clean, organised and professionally maintained
  • Ensure smooth kitchen operations during busy service periods
  • Take responsibility for kitchen operations when senior management is unavailable

Requirements & Eligibility

  • Previous experience as a Sous Chef or strong Junior Sous Chef ready to progress
  • Strong experience in Japanese cuisine is highly preferred
  • Demonstrated experience working with premium ingredients and refined dining
  • Proven ability to lead, supervise and develop kitchen staff
  • Strong understanding of food preparation, cooking techniques and presentation
  • Excellent attention to detail and consistency
  • Strong organisational and time-management skills
  • Ability to work effectively under pressure in a fast-paced kitchen
  • Positive, reliable and professional attitude
  • Strong teamwork and communication skills
  • Flexible availability for evenings, weekends and public holidays
  • Relevant culinary qualifications and industry experience
